RICE RECIPES

Sindhi Biryani Recipe






Ingredients:



Soaked rice 1-1/2 cups
Chicken ½ kg
Chicken mince 1/4 cup
Salt to taste
Turmeric powder 1 tsp
Red chilli powder 1 tsp
Garam masala powder 1 tsp
Garlic paste 1 tbsp
Ginger paste 1 tbsp
Yogurt 1 cup
Oil 2 tbsp
Ghee 4 tbsp
Cumin seeds 1 tsp
Cinnamon 1 inch stick
Black cardamoms 2
Green cardamoms 5
Cloves 6
Sliced onions 3 medium
Potato (½ inch cubes)     1 large
Chopped green chillies 4
Chopped mint leaves 2 tbsp
Saffron 8-10 strands
Milk 2 tbsp




Method:



Add salt, turmeric powder, red chilli powder, garam masala powder, garlic paste and ginger paste to the chicken and mix. Add yogurt and oil and mix and leave to marinate. Heat ghee in a pan. Add cumin seeds, cinnamon, black cardamoms, green cardamoms, cloves and onions and sauté. Add chicken qeema and stir and continue to sauté. Break the qeema lumps with the ladle as you sauté.

Add potato and sauté. Add salt, green chillies and chicken and stir well. Add mint leaves and rice and stir to mix well. Add water and mix. When the mixture comes to a boil, reduce heat and add saffron milk. Cover and cook till both the rice and chicken are cooked.









SALONI BIRYANI Recipe




Ingredients:


Chicken (bone less)             ½ kg
Tomatoes                      ½ kg
Black Cumin Seeds             1 tsp
Plum                         100 gms
Green Cardamoms                 4
Black Pepper                 2 tsp
Green Chilies                   6
Mint Leaves                     1 bunch
Ginger Garlic                   1 tbsp
Onions                       2
Red Chilies Powder             2 tsp
Salt                         1 tsp
Turmeric Powder                  1 tsp
Coriander Powder                  1 tsp
Oil ½ cup
For Rice:
Rice (soaked)                 ½ kg
 Cumin Seeds                  1 tsp
Salt                          1 tsp
Oil                         4tbsp


Method:


•    In a pan, heat oil add onions and fry until golden brown.
•    Now add ginger garlic, tomatoes, turmeric , salt, coriander powder,  plum, green cardamoms, black cumin seeds, red chili powder and cover it cook for 20 water.
•    In separate pan, heat oil add cumin seeds.
•    When aroma comes add soaked rice.
•    After this, add salt and cook.
•    When simmer comes add prepared chicken masala.
•    Sprinkles mint leaves and cover it for half an hour.
•    Let it simmer and removes from the stove.





Prawn Biryani




Ingredients


Rice ½ kg soaked or 30 minuets
Prawns cleaned ½ kg
Potatoes 2 cubed and fried
Brown onion 1 cup
Oil ¾ cup
Yogurt 1 cup
Milk ½ cup
Yellow color pinch
Saffron ¼ tsp
Ginger garlic 1 tbsp
Tomatoes chopped 3
Salt 2 tsp
Green chilies whole 4
Coconut milk ½ cup
Chili powder 2 ½ tsp leveled
Allspice 1 tsp
Turmeric ½ tsp
Coriander leaves chopped ½ cup
Mint leaves 10 to 12
Curry leaves 15
Kewra water 1 tbsp


Method


Boil rice with whole spices and 2 tbsp salt until ¾ done, drain water and keep aside, heat oil add brown onion with ginger garlic paste, salt, turmeric, chili powder, cook for 5 minutes add chopped tomatoes and fry well about 10 minutes, add 1 cup yogurt, fry add prawns with allspice, green chilies, cover and cook for 10 minutes until done and oil comes o top, lastly add chopped hara masala, curry leaves, now put half rice in a pan, top with prawn mixture, remaining rice, put milk mixture, color and saffron mixture on top with Kewra, leave it on dum for 20 minutes.









Murgh Bara Masala Biryani






Ingredients:


Chicken (16 pieces)                1 ½ kg
Onion (chopped)                    1 
Ginger (chopped)                    1 tbsp
Garlic (chopped)                     1 tbsp
Fennel Seeds                     1 tbsp
Coriander seeds                    1 tbsp
Salt                            1 tsp
Water                        3 cups
Rice                             ¾ kg
Column 2:
Oil                            ¾ cup
Curd                            ½ cup
Salt                            1 ½ tsp
Ginger Garlic                    1 tbsp
Coriander Powder                1 ½ tsp
All spice                        1 tsp
Mace                            ¼ tsp
Nutmeg                        ¼ tsp
Chilly Powder                    1 tbsp
Dried Plum                        8-10
Onion (chopped)                    1
Lemon Juice                    2 tbsp
Coriander Leaves                    few
Mint Leaves                    few
Green Chilies                    few
Yellow Color                    a pinch
Kewra                        few drops  

            
Method:


Make a small sack adding chopped onions, ginger, garlic, fennel seeds and coriander seeds.
Boil chicken with 3 cups of water, salt and prepared spices sack, boil till chicken is tender for about 20 minutes. Remove and discard the sack.
Heat oil, fry chopped onions, add ginger garlic paste and all the rest from column 2, add boiled chicken , cook till oil floats on top, add dried plum.
Boil rice with 1 tbsp salt till half done, place cooked chicken mixture in a large pan and spread chopped green masala, now spread boiled rice, topped with kewra and yellow color mixture. Spinkle brown onion on top and leave it on dum.











Egg Biryani








Ingredients :


ü  Basmati rice -  2 cups 
ü Water -  3 ½ cups 
ü  Eggs - 6 
ü  Onion (thin-sliced) - 1 
ü  Ginger paste - 1 tsp 
ü  Garlic paste - 1 tsp 
ü  Green chili (thin-sliced)- 2 
ü  Cloves - 3 
ü  Black pepper - 7 
ü  Bay leaves - 2 
ü  Brown cardamom - 1 
ü  Green cardamom - 2 
ü  Red chili powder - 1 tsp 
ü  Coriander powder - 1 tsp 
ü  Garam Masala Powder - 1 tsp 
ü  Cinnamon sticks (thin) 3-4 
ü  Cumin seeds - 1 tsp 
ü  Vegetable oil - 4 tbsp 
ü  Salt to taste 
ü  Chopped coriander leaves 

   
Method :


v Heat oil (3 tbsp.) in a pan.
v Add cumin seeds, green and brown
cardamom, cinnamon sticks, cloves, black
pepper and the bay leaves.
v Fry for a minute. Reduce the heat.
v Add sliced onion, green chili, ginger garlic
paste and fry until light golden brown.
v Add red chili powder, coriander powder, garam masala and salt. Mix well.
v Add rice and water. Stir well. Cover it and cook for 20 miutes on medium
heat. Slowly toss the rice upside down once, while its getting cooked.
v Meanwhile keep three eggs for boiling.
v Take the remaining three eggs and beat in a bowl. Add salt to it and beat
again.
v Heat oil (1 tbsp.) in a pan. Pour the beaten eggs. Continuously stir it and
cook until golden brown.
v Cut the boiled eggs into rings (thin slices). Arrange in the corners of the
serving dish plate.
v Once you are done with the rice, add the scrambled eggs to the rice and
slowly mix it taking care that you do not break the rice grains.
v Put the rice in the centre of the serving plate.
v Garnish with coriander leaves and serve hot.
