Zucchini Rice Kebabs






Ingredients

- 1 cup zucchini (with skin) grated
- chopped chives or spring onions
- 1 cup rice boiled and mashed
- 1 cup potatoes boiled and mashed
- ½ cup french beans finely diced blanched cucumber relish
- Thai sweet chilly sauce
- ½ cup fresh brown bread crumbled
- 2 tbsp red curry paste
- 2 tbsp cornflour
- 2-3 kaffir lime leaves shredded
- 1 tbsp coriander leaves chopped
- salt and pepper to taste
- 2 tbsp oil to grill


Method


- Put all the ingredients in a mixing bowl. Knead together into a firm and smooth dough.
- Mould and shape the mixture into small cutlets.
- Spray oil in a grilling pan and grill the cakes for about 4-5 minutes from both sides until golden brown.
- Remove and arrange on a snack platter, garnish with spring onions and serve hot with cucumber relish and Thai sweet chilly sauce.
