Hariyali Pulao





Ingredients : 

ü  Rice - 2 cups 
ü  Baby potato - 200 gms 
ü  Sliced onions - 2 
ü  Ghee - 4 tbsp 
ü  Bay leaves - 2 
ü  Cinnamon - 1" piece 
ü  Cardamoms - 3 
ü  Cloves - 3 
ü  Salt to taste 
For spice paste : 
ü  Green chilies - 4 
ü  Garlic - 7 pods 
ü  Ginger - 1" piece 
ü  Coriander leaves, chopped-50 
gms 

For garnishing : 

ü  Coriander leaves (chopped) 
 
Method :


v Grind all the ingredients for the spice
paste.
v Peel the baby potatoes, prick with a fork,
sprinkle salt and keep aside.
v Wash and drain the rice.
v Heat the ghee in a pan and fry the onions
till they are a light golden brown.
v Add the whole spices and fry for one minute.
v Mix in the spice paste and fry for another minute.
v Add the potatoes and fry for another 2-3 minutes.
v Mix in the rice and salt to taste.
v Stir well and add enough water to cook the rice.
v Cover with a lid and cook till the rice is tender.
v Serve garnished with coriander leaves.
