Ingredients :
ü Rice – 1 kg
ü Mutton – 1 kg
ü Cardamom – 10 gms
ü Cinnamon – 10 gms
ü Cumminseed – 10 gms
ü Cloves – 10 gms
ü Ginger – 40 gms
ü Garlic – 20 gms
ü Green Chilies – 100 gms
ü Fried Onion – 50 gms
ü Coriander Leaves – 1 bunch
ü Mint leaves – 1 bunch
ü Lemon - 2
ü Curd – ¼ cup
ü Ghee – 250 gms

Method :
v Wash mutton and put it in a vessel.
v Grind green chilies, ginger, garlic, spices,
fried onion, and mix them all, then add
this mixture to the meat.
v Then add curd to it, mix thoroughly. Keep
aside for half an hour.
v Boil 2 litres of water.
v When water comes to a boil add the rice. Take out the semi-cooked rice
and spread it on the meat and spices mixture as a layer. Take some more
rice and spread as second layer. Finally, spread the fully cooked rice.
v Prepare a mixture of one cup of boiled water and 1/4 kg ghee and spill it
on the rice.
v Now cover and seal the edges with dough. Put the vessel on the stove,
cook for 15 minutes on medium flame.
v Let it cool a bit for 10-15 minutes and take off the seal.
v Hyderabadi mutton biryani is ready to serve.
