Corn Masala Rice





Ingredients : 

ü  Basmati rice – 1cup 
ü  Corn kernels – 1 cup 
ü  Green peas – 1 cup 
ü  Cashews halved, 10 -12 
ü  Chili Powder – 1 tsp 
ü  Sambar masala – 1 tsp 
ü  Garam masala – ½ tsp 
ü  Sugar – 1 tsp 
ü  Turmeric powder – ¼ tsp 
ü  Salt to taste 
ü  Juice of 1 lemon 
ü  Oil or ghee – 2 tbsp 
ü  Cumin seeds – ½ tsp 
ü  Mustard seeds – ½ tsp 

Method :


v  In a heavy saucepan heat the ghee. Add
the cashews and fry till light brown.
Remove.
v To same oil add cumin and mustard seeds
to splutter.
v Add the corn, peas, rice and all dry
masalas and 5 cups water. Cover and cook till almost don
v Add lemon juice, sugar, coriander and cashews.
v Cover and cook till rice is done and no water is left.
v Extra masalas may be added as per desired spiciness.
v Serve hot with curd.
