Spicy Burgers



Ingredients:



Chicken breasts (flattened) 4
Salt 1/2 tsp
Black pepper 1/2 tsp
Garlic paste 1 tsp
Ketchup 1 tbsp
Chilli sauce 1 tbsp
Burger buns 4
Salad leaves as required
Cheese slices as required
Mayonnaise 1/2 cup
Vinegar 1 tbsp
Fries to serve
For Batter:
Flour 2 tbsp
Baking powder 1 tsp
Corn flour 2 tbsp
Baking powder 1/4 tsp
Salt 1/4 tsp
White pepper 1/4 tsp
Paprika powder 1/4 tsp
Chilli sauce 1 tbsp
Milk to form batter




Method:



Blend mayonnaise and vinegar, set aside. Marinate chicken with salt, black pepper, garlic paste, ketchup, chili sauce and then leave to marinate for a few minutes. Blend the ingredients of the batter and make a smooth paste using milk. Dip the chicken in the batter. Fry in hot oil. Apply mayonnaise on toasted buns and put chicken pieces, salad leaves, cheese slices and serve with fries.













Salmon BurgerS and Sweet Potato oven FrieS



ingredientS:


Sweet Potato Oven Fries
4 large sweet potatoes (yams)
tbsp canola oil
1 tbsp lemon pepper seasoning
blend
Salmon Burgers
1 14.75-ounce can pink or red
salmon
2 green onions, chopped
½ cup chopped red bell pepper
8 crackers, unsalted tops
(saltine-like), crushed
2 tsp lemon juice
Egg whites from 2 eggs,
whisked
2 tbsp plain low-fat yogurt
¼ tsp ground black pepper
Cooking spray
4 whole-wheat buns
Bibb lettuce, 8 leaves
2 medium tomatoes, sliced






direCtionS:

Place oven rack in center, heat oven to 425 °F. Wash and scrub sweet
potatoes, slice into wedges, length-wise. In a large bowl, toss potato
wedges with canola oil and seasoning. Spread on cookie sheet. Roast
in the oven, turning occasionally, until tender and golden brown, about
30-40 minutes. While sweet potatoes are roasting, prepare salmon
burgers. Drain salmon; place in a medium mixing bowl and fake. Fold in
green onions and red pepper, crushed crackers, lemon juice, egg whites
and yogurt. Shape into 4 patties. Coat large nonstick skillet lightly with
cooking spray; heat. Cook salmon burgers until golden brown, turn, and
continue cooking until other side is golden brown. Serve burgers with
sliced tomatoes and lettuce, and sweet potato oven fries.











Nacho Burgers






Ingredients


2 pounds lean ground beef
1 large egg, whisked with a fork
1/2 teaspoon salt
1/4 teaspoon pepper
about 20 medium black olives, chopped
1 medium red onion, chopped
3/4 cup grated Monterrey jack cheese
1/2 cup salsa




Directions



Gently toss these ingredients together until mixed. Don’t handle more than necessary. Form
nice flat burger patties with a hamburger press. Cook them until done, turning only once and
without pressing the burgers with the spatula while cooking. Turning only once will trap more of
the juices in the burger; pressing with the spatula forces the juices from the meat.










Kofta Burger



Ingredients:



For Burger
All Purpose Flour ½ kg
Yeast 1-1/2 tbsp
Egg 2 
Baking Powder 2 tsp
Sugar 2-3 tbsp
Salt to taste 
For Kofta
Beef Mince ( Double Grinded) ½ kg
Onion 1
Roasted and Powder Chick Peas 2-3 tbsp
Chopped Ginger Garlic 1 tbsp
Red Chili Powder 1 tbsp
Cumin Powder ½ tsp
Crushed Black Pepper ½ tsp
Baking Powder 1 tsp
Clarified Butter or Oil for deep fry
Salt to taste
For Filling 
Chili Garlic Sauce ½ cup
Lettuce Leaves as required
Cheese Slice as required 




Method




For burger: Take a mixing bowl ½ kg all purpose flour,add 1-1/2 tbsp of yeast, 2-3 tbsp of sugar , 2 tsp of baking powder,and add to taste salt mix it well, and make a dough and place the dough in a warm place, when the dough is raised and set it into mould and leave it ½ an hour , place the dish in a preheated oven and bake it for 12-15 minutes on 200 C. and take it out and serve it. For kofta: Take a cooking pan add 1 chopped onion fry on a high flame. Now take a chopper add ½ kg of mince (double grinded), with fat, add fried onion, 2-3 tbsp of crushed and powder chick peas, 1 tbsp of chopped ginger garlic,, 1 tbsp of red chili powder, ½ tsp cumin powder, ½ tsp of blackpepper and add to taste salt and make a paste. Now make a kofta and shallow fry till its golden brown and set aside. For filling: Take burger buns spread ½ cup of chili sauce add kofta , as required lettuce leave, as required cheese and close with a burger and serve it.













Egg Sandwich with Mushroom Hash




Ingredients:

  2 tsp butter
  1 small potato, diced
  ½ lb mushrooms, sliced
  2 cloves garlic, fnely chopped
  2 eggs
   salt and pepper
  2 rolls, 2 English muffns, 
or 4 slices of bread
addi t ions
   tomato, sliced
   avocado
   cheese
var iat ions
   potato and onion
   potato and pea
   collards and bacon
   zucchini 
   chorizo and green chili



Method:


Melt half the butter in a pan on medium heat, then throw in the potato
and cook for 5 minutes, stirring minimally. Season with salt and
pepper. Add the mushrooms and garlic, as well as a splash of water if
the potatoes are getting stuck to the pan. Cook for another 5 minutes,
until the mushrooms are brown and have shrunk down.
Test the potato by piercing one piece with a fork. If it goes through
easily, you’re done. If not, cook for a few more minutes. (The smaller
the potatoes are chopped, the quicker they’ll cook.) Taste and adjust the
seasoning to your preferences.
Melt the other teaspoon of butter in another pan on medium heat. Crack
the eggs into the pan and dust with salt and pepper again. Salt and
pepper are critical to these ingredients, so don’t worry about overdoing it.
If you like your eggs sunny-side up, place a lid over the pan to ensure
the whites will cook through without making the yolks hard. Once the
whites are no longer translucent, take them off the heat.
If you like eggs over-easy (my favorite), wait until the yolks are cooked
but still look runny, then fip each egg with a spatula and let the other
side cook for about 15 seconds. That’ll get your whites fully cooked, but
keep the yolks runny—the best. If you prefer hard yolks (please no!),
then cook for a little longer.
Toast the bread or bun, then assemble it into a sandwich, using any
condiments you like. Way better than what you’ll fnd at the corner deli. b r eakfas t 26











Daal Burger





Ingredients:



Bengali Gram 150 g 
Red Lentils 150 g 
Potatoes 1
Onions 1
Gram Flour 3-4 tsp 
Green Chilies 4
Coriander 2 tbsp 
Red Pepper Flakes 1 tsp 
Oil For deep frying 
Eggs 2 
Salt To taste



Method:

Soak the lentils overnight, drain in the morning, boil and grind.
Mix all the ingredients.
Divide the mixture in small balls and roll them into any shape you prefer.
Coat them in the egg mixture.
Heat the oil.
Deep fry all the patties.









Crispy Chicken Burger




Ingredients 



Chicken Breast 1
Eggs 2-3 
Buns 3-4
White Flour ½ cup
Rice Flour 1 cup
Corn Flour 1 cup 
Baking Powder 1/3 tsp
Garlic Powder 1 tsp 
Red Chili Powder 1 tsp 
Crushed Black Pepper 1 tbsp 
White Pepper Powder 1 tbsp 
Mustard Paste 2-3 tbsp 
Chicken Powder 2 tbsp 
White Vinegar 3 tbsp 
Oil for fry
Ice Berg or Lettuce Leaves as required
Mayonnaise as required 
Salt to taste 




Method





Take 1 chicken breast and now take 1 plastic shopper spread some oil in it add the chicken breast piece and flatten with kitchen hammer. Now cut the thin slices and take a mixing bowl add 3 tbsp of white vinegar add to taste salt , 2 -3 tbsp of mustard paste, 1 tsp of red chili powder and 1 tsp of garlic powder mix it well and leave it for ½ an hour and marinate it. For dry mixture : Take 1 big air tight container add ½ cup of all purpose flour ,1 cup of rice flour, 1 cup corn flour, 2 tbsp of chicken powder ,1 tbsp of white pepper powder , 1/3 tsp of baking powder , 1 tsp of baking powder , 1 tsp of garlic powder and add to taste salt mix it well. For crispy chicken. Take 1 mixing bowl add 3 eggs beat it add marinate the chicken into a air tight container mix it well and add into beated eggs and repeat the process at laest twice. Take a fry pan shallow fry all the pieces. For sauce: take a mixing bowl add ½ cup of mayonaise , 1 tbsp of mustard paste, ,mix it well. For crunchy burger: take burger buns spread the mayo sauce and place the chicken piece now again add the sauce and place the ice berg and lettuce leave. At last close the burger with upper part of the bun and serve it.












Country Pork and Asiago Cheese burger



Ingredients:


one large sweet onion, sliced
1 tablespoon butter
1 pound ground pork
1/2 pound country sausage
8 strips bacon, chopped
1/4 cup parsley, chopped
1/2 teaspoon dried thyme
salt and pepper
Asiago cheese
6 hamburger or sandwich buns



Method:


Cook the onion slices in butter until tender. Set aside.
While the onions are cooking, mix the ground pork, sausage, chopped bacon, parsley, and thyme
together in a large bowl. Form patties by hand or with a hamburger press.
Cook the patties and top with cheese. Place the cooked patties on a prepared bun, top with
onions, and serve












Chicken Marinara burger



Ingredients


All Purpose Flour 300 grams 
Yeast 1-1/2 tbsp
Sugar 1 tsp
Egg 1
Baking Powder 1 tsp
Salt to taste 
For Marinara Sauce 
Boneless Chicken Fillet 300 grams 
Chopped Tomatoes 5-6
Onion 1
Garlic 4-5 
Garlic Paste 1 tsp 
Vinegar 2 tbsp
Crushed Black Pepper 1 tsp
Cheese Slice as required 
Bread Crumbs ½ cup
Soya Sauce 1 tbsp
Basil 1 pinch 
Lettuce Leaves as required 
Olive Oil 2 tbsp
Oil for fry 
Salt to taste 




Method




For burger bun: Take a luke warm water add 1-1/2 tbsp of yeast and 1 tsp of sugar mix it well when its dissolve leave it for 15 minutes. Now take a mixing bowl add 300 grams of all purpose flour, add to taste salt, 1 egg, 1 tsp of baking powder, and mix it well to make a dough and leave 3-4 hours. When the dough is raised make buns and bake it in the oven for 15-18 minutes on 200 C. when its ready take it out and keep aside. For Marinara : Take 300 grams of chicken fillet cut into the middle add 1 tsp of garlic paste, ½ tsp crushed black pepper, add to taste salt, 1 tbsp of soya sauce, mix it well. now coat into ½ cup of bread crumbs. Take a chopper 1 pinch of basil , 1 chopped onion , and 1 tsp of olive oil to make a paste. Now take a cooking pan add oil, heat the oil add 4-5 chopped garlic cloves, now add the onion paste , fry add 5-6 chopped tomatoes, mix it well and roasted. Then add 2 tbsp of vinegar, ½ tsp of crushed black pepper mix it well when the tomatoes are soften and its look like a sauce take it out. Now cut the buns into the middle spraed the sauce and place the chicken fried fillet, chesses slice. At last garnish with lettuce leaves and serve it.














BITE SIZED BURGER Recipe






INGREDIENTS:

Small Burger Buns                  6
Minced Beef                            ½ kg
Egg                                           1
Chopped Onions                    2
Coriander Leaves                   ½ bunch
Salt                                          1 tsp
Black Pepper                          1 tsp
Red Chili Powder                  1 tsp
Chopped Garlic                     1 tbsp
Mustard Paste                      1 tbsp
Soya Sauce                           1 tbsp
Sesame Seeds                       1 tbsp
Oil                                            as required





METHOD:



In a bowl add,  minced beef,  egg,  chopped onions,  coriander leaves,  salt, black pepper, red chili powder and chopped garlic and mix it and fry it after making kababs. Now in small 6 buns, first put thousand island dressing and then put kabab and serve.

















Beef Cheese Burger





Ingredients 

for beef patties:


Beef minced 250 gms
Salt and black pepper 1 tsp each
Onion powder 1 tsp
Garlic powder half tsp
Butter 1 tsp
Water 2 to 3 tbsp
To assemble burger:
Burger buns 2 or 3
Ketchup 2 tbsp
Mustard paste as required
Cheese slices 3 to 4
Chopped onion sauté in 1 tbsp oil
Gherkins sliced 4 to 6
Iceberg lettuce as required
Tomato cut into slices 1
Mayonnaise As required




Method:


Grind all together in chopper well till smooth. Make patties of equal size and shallow fry.
To assemble burger Method: Toast the buns. Apply mustard paste patty, cheese slice, ice burg salad, gherkins, tomato slice, mayonnaise, ketchup cover with bun and serve

















Banh Mi Burger




Ingredients 

For Pattie
Chicken Mince 200 grams
Prawns 200 grams
Beef Mince 200 grams
Ginger 1 inch piece 
Crushed Black Pepper ½ tsp
Spring Onion 1-2 strands
Oil for frying
Salt to taste
For Marination
Fish Sauce ½ cup
Ginger Garlic Paste 1 tsp
Sugar 2 tbsp
Thai Curry Paste 1 tbsp
Lemon Juice 2 tbsp
Turmeric Powder ½ tsp 
Lemon Grass 1 strand
Red Chilies 2-3
Basil 1/3 tsp
For Sauce 
Mayonnaise 1 cup
Ginger Paste 1 tsp
Sugar 1 tbsp
Fish Sauce 1 tsp
Lemon Juice 1 tbsp
Curry Powder 1 tsp
For Serving 
Bun 3-4
Carrot (Sliced) 1-2
Lettuce Leaves 3-4



Method



For marinade: take a blender add ½ cup of fish sauce, 1 tsp of ginger garlic paste , 2 tbsp of sugar, 1 tbsp of Thai curry paste. 2 tbsp lemon juice, ½ tsp of turmeric powder, 1 strand of lemon grass, 2-3 red chilies, 1/3 tsp of basil mix it well into a blender blend it to make a paste. For patties: take a chopper add 200 grams of chicken mince, 200 grams of prawns, 200 grams of beef mince, 1 inch piece of ginger,1/2 tsp of crushed black pepper, 1-2 strands of spring onion and add to taste salt blend it and make patties. Take a cooking pan heat the oil and then take patties dip into marination and shallow fry the patties until its golden brown and set aside. For sauce: Take a mixing bowl add 1 cup of mayonnaise, 1 tsp of ginger garlic paste, 1 tbsp of sugar,1 tsp of fish sauce, 1 tbsp of lemon juice, 1 tsp of curry powder mix it well. For serving: Take 3-4 buns slightly roasted and spread the sauce on the base of the bun place the patties, 1-2 slices of carrot, 3-4 lettuce leaves spread the sauce on the bun close the bun and repeat the process again and serve it.
