Spicy Burgers



Ingredients:



Chicken breasts (flattened) 4
Salt 1/2 tsp
Black pepper 1/2 tsp
Garlic paste 1 tsp
Ketchup 1 tbsp
Chilli sauce 1 tbsp
Burger buns 4
Salad leaves as required
Cheese slices as required
Mayonnaise 1/2 cup
Vinegar 1 tbsp
Fries to serve
For Batter:
Flour 2 tbsp
Baking powder 1 tsp
Corn flour 2 tbsp
Baking powder 1/4 tsp
Salt 1/4 tsp
White pepper 1/4 tsp
Paprika powder 1/4 tsp
Chilli sauce 1 tbsp
Milk to form batter




Method:



Blend mayonnaise and vinegar, set aside. Marinate chicken with salt, black pepper, garlic paste, ketchup, chili sauce and then leave to marinate for a few minutes. Blend the ingredients of the batter and make a smooth paste using milk. Dip the chicken in the batter. Fry in hot oil. Apply mayonnaise on toasted buns and put chicken pieces, salad leaves, cheese slices and serve with fries.













Salmon BurgerS and Sweet Potato oven FrieS



ingredientS:


Sweet Potato Oven Fries
4 large sweet potatoes (yams)
tbsp canola oil
1 tbsp lemon pepper seasoning
blend
Salmon Burgers
1 14.75-ounce can pink or red
salmon
2 green onions, chopped
½ cup chopped red bell pepper
8 crackers, unsalted tops
(saltine-like), crushed
2 tsp lemon juice
Egg whites from 2 eggs,
whisked
2 tbsp plain low-fat yogurt
¼ tsp ground black pepper
Cooking spray
4 whole-wheat buns
Bibb lettuce, 8 leaves
2 medium tomatoes, sliced






direCtionS:

Place oven rack in center, heat oven to 425 °F. Wash and scrub sweet
potatoes, slice into wedges, length-wise. In a large bowl, toss potato
wedges with canola oil and seasoning. Spread on cookie sheet. Roast
in the oven, turning occasionally, until tender and golden brown, about
30-40 minutes. While sweet potatoes are roasting, prepare salmon
burgers. Drain salmon; place in a medium mixing bowl and fake. Fold in
green onions and red pepper, crushed crackers, lemon juice, egg whites
and yogurt. Shape into 4 patties. Coat large nonstick skillet lightly with
cooking spray; heat. Cook salmon burgers until golden brown, turn, and
continue cooking until other side is golden brown. Serve burgers with
sliced tomatoes and lettuce, and sweet potato oven fries.











Nacho Burgers






Ingredients


2 pounds lean ground beef
1 large egg, whisked with a fork
1/2 teaspoon salt
1/4 teaspoon pepper
about 20 medium black olives, chopped
1 medium red onion, chopped
3/4 cup grated Monterrey jack cheese
1/2 cup salsa




Directions



Gently toss these ingredients together until mixed. Don’t handle more than necessary. Form
nice flat burger patties with a hamburger press. Cook them until done, turning only once and
without pressing the burgers with the spatula while cooking. Turning only once will trap more of
the juices in the burger; pressing with the spatula forces the juices from the meat.










Kofta Burger



Ingredients:



For Burger
All Purpose Flour ½ kg
Yeast 1-1/2 tbsp
Egg 2 
Baking Powder 2 tsp
Sugar 2-3 tbsp
Salt to taste 
For Kofta
Beef Mince ( Double Grinded) ½ kg
Onion 1
Roasted and Powder Chick Peas 2-3 tbsp
Chopped Ginger Garlic 1 tbsp
Red Chili Powder 1 tbsp
Cumin Powder ½ tsp
Crushed Black Pepper ½ tsp
Baking Powder 1 tsp
Clarified Butter or Oil for deep fry
Salt to taste
For Filling 
Chili Garlic Sauce ½ cup
Lettuce Leaves as required
Cheese Slice as required 




Method




For burger: Take a mixing bowl ½ kg all purpose flour,add 1-1/2 tbsp of yeast, 2-3 tbsp of sugar , 2 tsp of baking powder,and add to taste salt mix it well, and make a dough and place the dough in a warm place, when the dough is raised and set it into mould and leave it ½ an hour , place the dish in a preheated oven and bake it for 12-15 minutes on 200 C. and take it out and serve it. For kofta: Take a cooking pan add 1 chopped onion fry on a high flame. Now take a chopper add ½ kg of mince (double grinded), with fat, add fried onion, 2-3 tbsp of crushed and powder chick peas, 1 tbsp of chopped ginger garlic,, 1 tbsp of red chili powder, ½ tsp cumin powder, ½ tsp of blackpepper and add to taste salt and make a paste. Now make a kofta and shallow fry till its golden brown and set aside. For filling: Take burger buns spread ½ cup of chili sauce add kofta , as required lettuce leave, as required cheese and close with a burger and serve it.













Fried Chicken and Cheese Burger



Ingredients:


Chicken Mince            ½ kg
Salt                        1 tsp
Thyme                    ½ tsp
Oregano Powder            ½ tsp
White Pepper            ½ tsp
Ginger Garlic            1 tsp
Wostershire Sauce        1 tbsp
Egg                        1+1
Bread Crumbs            to coat
Tomato Slices            4
Bread (soaked in milk)    2 slices
Mayonnaise                 as required
Cheese Slices            as required
Burger Buns                    4
Cabbage Sices mixed with 1 tbsp mayo    1 cup




Method:


Mix all seasoning with mince with soaked bread and 1 egg. Make thick patties, dip in beaten egg, roll in crumbs and shallow fry till its light golden from both sides. Heat burger buns, spread mayonnaise, place cabbage mixture, fried patty, topped with cheese slice. Grill the burger for 2 min till cheese melts, place tomato slices on it , spread mayonnaise , cover with bun top and serve.











Chicken Burger















Ingredients:



-  Burger Buns            4
- Mayonnaise            4 tbsp
 Cheese Slices                4
 - Butter                2 tbsp
 - Tomato Sliced            1
 -  Onion Sliced             1
 - Lettuce                 to garnish
Fries and ketchup             to serve
Ing for the patty:
- Chicken Mince 1/2 kg
 - Ginger Garlic Paste 1 tsp
 - Chopped Green Chilies     1 tsp 
 - Coriander Leaves Chopped 1tbsp
 - Pepper Powder         1/2 tsp
 - Salt                 to taste 
 - Oil                 1 tbsp 
 - Lemon juice          1/2 lemon




Method:


For the patty, mix all the ingredients in a bowl and cover with cling foil and refrigerate for 5-6 hours. Just an hour before cooking, remove the marinated mince and let it come to room temperature. Divide into equal sized balls and pat them on your palms in the shape of a patty. Heat some butter in a pan and fry the patties to a nice brown colour on both sides. Cut the burger buns from the centre and toast both the sides of the bread in the left over butter of patties on the grill. place the base of the burger on a plate and spread some mayonnaise a few leaves of lettuce,  cheese slice, then a chicken patty, onion and tomato slices cover with the other bun, Serve with fries and ketchup.












Burgers in Garlic Sauce





Ingredients:


Mutton or beef mince 1/2 kg
Chopped onion 1
Salt 1 tsp
Ground pepper 1/4 tsp
For the Sauce:
Heads of garlic 6 (large)
Extra virgin olive oil 1/2 cup
Bread slices (remove crust) 2
Lemon juice 2 tbsp
Salt to taste
Pepper to taste



Method:


Place garlic bulbs in foil. Drizzle with some olive oil and sprinkle with salt. Wrap in the foil and bake in preheated oven at 200 degrees C for 45 minutes or until soft. Cool garlic, chop off top, and squeeze out garlic cloves. Soak bread in water for 1 minute, squeeze dry, and place in food processor. Add garlic and process into a smooth paste. Add lemon juice, and gradually add rest of olive oil in a smooth stream to make a paste. Add salt and pepper to taste. Mix ground meat, onions, salt, and pepper. Shape into 4 patties. Place on preheated pan or grill until cooked. Serve with garlic sauce.




















Buffalo Bill Burger






Ingredients:


Undercut Steak         8 oz
Salt                    ½ tsp
Black Pepper            ½ tsp
Mustard                ½ tsp
Worcestershire Sauce    1 tbsp
Oil                    1 tbsp
Ginger Garlic            ½ tsp
Flour                 1 tsp
Fresh Cream            2 tbsp
Oil (for frying)        2 tbsp
Onion (finely chopped)    1 tbsp
Bun                    as required
Butter                as required
Maynnaise            as required
Salad Leaf            as required




Method:



Marinate steak with salt, black pepper, mustard, Worcestershire Sauce, oil and ginger garlic paste and leave it for ½ an hour.
Now heat oil, fry chopped onions till light golden and in marinated steak, fry well for 4 minutes each side. Drizzle some Worcestershire Sauce, when beef is done add in flour with cream, mix and cook for another 3-4 minutes. Remove when sauce is thick. Cut buns, heat and spread butter on it. Place salad leaf topped with steak and its sauce. Cover with another bun and serve with fries.















Beef Cheese Burger





Ingredients 

for beef patties:


Beef minced 250 gms
Salt and black pepper 1 tsp each
Onion powder 1 tsp
Garlic powder half tsp
Butter 1 tsp
Water 2 to 3 tbsp
To assemble burger:
Burger buns 2 or 3
Ketchup 2 tbsp
Mustard paste as required
Cheese slices 3 to 4
Chopped onion sauté in 1 tbsp oil
Gherkins sliced 4 to 6
Iceberg lettuce as required
Tomato cut into slices 1
Mayonnaise As required




Method:


Grind all together in chopper well till smooth. Make patties of equal size and shallow fry.
To assemble burger Method: Toast the buns. Apply mustard paste patty, cheese slice, ice burg salad, gherkins, tomato slice, mayonnaise, ketchup cover with bun and serve

















Banh Mi Burger




Ingredients 

For Pattie
Chicken Mince 200 grams
Prawns 200 grams
Beef Mince 200 grams
Ginger 1 inch piece 
Crushed Black Pepper ½ tsp
Spring Onion 1-2 strands
Oil for frying
Salt to taste
For Marination
Fish Sauce ½ cup
Ginger Garlic Paste 1 tsp
Sugar 2 tbsp
Thai Curry Paste 1 tbsp
Lemon Juice 2 tbsp
Turmeric Powder ½ tsp 
Lemon Grass 1 strand
Red Chilies 2-3
Basil 1/3 tsp
For Sauce 
Mayonnaise 1 cup
Ginger Paste 1 tsp
Sugar 1 tbsp
Fish Sauce 1 tsp
Lemon Juice 1 tbsp
Curry Powder 1 tsp
For Serving 
Bun 3-4
Carrot (Sliced) 1-2
Lettuce Leaves 3-4



Method



For marinade: take a blender add ½ cup of fish sauce, 1 tsp of ginger garlic paste , 2 tbsp of sugar, 1 tbsp of Thai curry paste. 2 tbsp lemon juice, ½ tsp of turmeric powder, 1 strand of lemon grass, 2-3 red chilies, 1/3 tsp of basil mix it well into a blender blend it to make a paste. For patties: take a chopper add 200 grams of chicken mince, 200 grams of prawns, 200 grams of beef mince, 1 inch piece of ginger,1/2 tsp of crushed black pepper, 1-2 strands of spring onion and add to taste salt blend it and make patties. Take a cooking pan heat the oil and then take patties dip into marination and shallow fry the patties until its golden brown and set aside. For sauce: Take a mixing bowl add 1 cup of mayonnaise, 1 tsp of ginger garlic paste, 1 tbsp of sugar,1 tsp of fish sauce, 1 tbsp of lemon juice, 1 tsp of curry powder mix it well. For serving: Take 3-4 buns slightly roasted and spread the sauce on the base of the bun place the patties, 1-2 slices of carrot, 3-4 lettuce leaves spread the sauce on the bun close the bun and repeat the process again and serve it.
